Dreamy Cinnamon Rolls

Here's another winning recipe from my sister-in-law, Yvonne, who has clearly tightly honed her baking repertoire so we all may benefit from her recommendations (the Boss Brownies and Soft and Oaty Chocolate Chip Cookies are Yvonne-gems).

Stage 1

In a large bowl add:
  • 1 cup of boiling water
  • 1/2 cup of sugar (dissolve sugar in boiling water)
  • 1 cup of cold water
  • 2 Tbsp of active dry yeast, sprinkled
Cover and stash in a warm place until frothy.

Stage 2
Stir in:
  • 3 cups of flour
  • 2 tsp of salt
  • 1 egg
  • 1/4 cup of oil
  • 2 more cups of flour
Knead with up to ½ cup of flour.
Oil the bowl.
Leave dough to rise for 1 hour.

Stage 3
Preheat oven to 190 degrees C.
Cut dough in half and roll out into two rectangles as best you can.

Spread over dough:
  • 75g melted butter – microwave for 25 seconds to make half liquid, half soft cream, stir, spread cream, by the time you do second rectangle, the liquid will be cream.
  • ½ cup (+) brown sugar per half.
  • 2 teaspoonfuls of cinnamon across each half.
Roll up rectangles and cut spiral slices. (Cutting with floss is cool. My sister taught me.)

Bake at 190 degrees C for 15 to 20 minutes.
(Makes at least 30.)

(I also drizzle over a basic vanilla make them dreamier.)

Best served a little warm...we reckon.
